The Winery’s vineyards are planted in the central area of the gentle slope of a mountain proximate to Ofra in chalky rocky ground at an elevation of 900 meters above sea level. The location is an excellent one for vineyards and its influence contributes definitively to the characteristics of the wine produced. Planting has been done in a careful thoughtful manner so as not to overcrowd the vineyards. Production is therefore limited to approximately 900 kilograms of grapes per dunam (1000 square meters). This special care assures that the grapes are flavorful with full bouquets that can be easily recognized and discerned in the wines produced.
The grape harvest takes place at the end of October and the beginning of November. The grapes are picked by hand in the early morning hours and placed in small containers to prevent excess pressure on the grapes thereby precluding premature crushing of the grapes and early fermentation of the juice.
The 32 dunam of Tanya’s vineyards produce grapes of the following varieties: cabernet sauvignon; merlot; shiraz; and chardonnay.
